Ice Lollies

A super easy way to customise ice lollies - home made!

Servings 6

Ingredients

Strawberry Cheesecake

  • Fresh Strawberries
  • 1 Digestive Biscuit
  • 150 g Breyer's Vanilla Ice cream equivalent of 285ml
  • a dash Almond Milk/Soya Milk (or milk of your choice!)

Mojito

  • 150 g Breyer's Vanilla Ice Cream equivalent of 285ml
  • fresh Mint
  • 2 shots Rum (of your choice!)
  • 2 Limes (juice and zest)
  • a dash Almond Milk/Soya Milk (or milk of your choice!)

Choc Chip & Orange

  • 150 g Breyer's Chocolate Ice Cream equivalent of 285ml
  • Chocolate Chips
  • Orange flavouring
  • Fresh Orange segments, chopped
  • a dash Almond Milk/Soya Milk (or milk of your choice!)

Blueberry

  • 150 g Breyer's Vanilla Ice Cream equivalent of 285ml
  • Fresh Blueberries
  • a dash Almond Milk/Soya Milk (or milk of your choice!)

Peanut Butter & Banana

  • 100 g Breyer's Vanilla Ice Cream equivalent of 285ml
  • 1 large Banana
  • 2 spoonfuls Crunchy Peanut Butter
  • a dash Almond Milk/Soya Milk (or milk of your choice!)

Cappuccino & Choc Chip

  • 150 g Breyer's Vanilla Ice Cream equivalent of 285ml
  • 2 tbsp Instant Coffee (I like Nescafe Azera, because it's more of a powder than granules)
  • Chocolate Chips
  • a dash Almond Milk/Soya Milk (or milk of your choice!)

Traffic Light Jelly & Haribo

  • Strawberry Jelly powder/cubes
  • Lemon Jelly powder/cubes
  • Lime Jelly powder/cubes
  • Haribo Star Mix

Coconut & Pineapple

  • 150 g Alpro Coconut Ice Cream equivalent of 285ml
  • Canned Pineapple pieces
  • a dash Almond Milk/Soya Milk (or milk of your choice!)

Matcha Green Tea & White Choc Swirls

  • half tsp Matcha powder (if you like Matcha, you may want it stronger, but it will depend on your personal taste!)
  • 150 g Breyer's Vanilla Ice Cream equivalent of 285ml
  • White Chocolate Bar (use a potato peeler for swirls!)
  • a dash Almond Milk/Soya Milk (or milk of your choice!)

Cookies n Cream

  • 150 g Breyer's Vanilla Ice Cream equivalent of 285ml
  • 4 Oreos
  • a dash Almond Milk/Soya Milk (or milk of your choice!)

Instructions

Strawberry Cheesecake

  1. Add your ice cream and a few strawberries into a blender/smoothie maker. You will have to add a few dashes of milk (almond/soya/dairy) to ensure that the mixture is wet enough to blend!

  2. When the mixture is blended, crush the digestives by hand into chunks and chop some strawberries.

  3. Fold the strawberries and digestives into the smoothie blend.

  4. Pour into the ice-cream moulds and leave to set!

  5. Mojito

  6. Add your ice cream and rum into a blender/smoothie maker. You may have to add a few dashes of milk (almond/soya/dairy) to ensure that the mixture is wet enough to blend, but it should be wet enough with the rum (if you put enough rum in...!)

  7. When the mixture is blended, mix in the juice of two limes, the zest of those limes and a few mint leaves.

  8. Pour into the ice-cream moulds and leave to set!

  9. Chocolate Chip and Orange

  10. Add your ice cream and a few drops of orange flavouring into a blender/smoothie maker. You may have to add a few dashes of milk (almond/soya/dairy) to ensure that the mixture is wet enough to blend.

  11. When the mixture is blended, fold in a handful of chocolate chips and chopped orange pieces.

  12. Pour into the ice-cream moulds and leave to set!

Blueberry

  1. Add your ice cream and handful of blueberries into a blender/smoothie maker. You may have to add a few dashes of milk (almond/soya/dairy) to ensure that the mixture is wet enough to blend.

  2. When the mixture is blended, fold in a handful of whole blueberries.

  3. Pour into the ice-cream moulds and leave to set!

Peanut Butter and Banana

  1. Chop up your banana. Add along with the ice cream into a blender/smoothie maker. You may have to add a few dashes of milk (almond/soya/dairy) to ensure that the mixture is wet enough to blend.

  2. When the mixture is blended, fold in spoonfuls of the peanut butter, gently. This will create little pockets of yummy peanut butter!

  3. Pour into the ice-cream moulds and leave to set!

Cappuccino and Chocolate Chip

  1. Add your ice cream and powdered coffee into a blender/smoothie maker. You may have to add a few dashes of milk (almond/soya/dairy) to ensure that the mixture is wet enough to blend.

  2. When the mixture is blended, fold in chocolate chips.

  3. Pour into the ice-cream moulds and leave to set!

Traffic Light Jelly and Haribo

  1. Make up the mixture for 100ml of strawberry jelly. 

  2. When you have done this, pour the 100ml equally amongst the 6 ice-cream moulds.

  3. Drop one haribo gummy in and put in the freezer.

  4. When the first layer is partially frozen (check after 2 hours), make up 100ml of lemon jelly.

  5. Pour the 100ml equally amongst the 6 ice-cream moulds and drop in one or who haribo gummies.

  6. Put back in the freezer and repeat the process. After 2 hours, make up 100ml of lime jelly, add gummies and pop back in the freezer. 

  7. Leave to set and then enjoy!

  8. Coconut and Pineapple

  9. Add your ice cream and a few dashes of milk (almond/soya/dairy) to ensure that the mixture is wet enough to blend. Blend the coconut ice cream and milk so it has a smoothie consistency.

  10. Fold in pineapple chunks.

  11. Pour into the ice-cream moulds and leave to set!

Matcha Green Tea

  1. Use a potato peeler to make White Chocolate Swirls. Make sure you peel away from your hand, outwards - safety first!

  2. Add your ice cream and half a teaspoon of matcha powder into a blender, along with a few dashes of milk to help it blend. Matcha is a real marmite thing - taste the matcha to make sure you put enough powder in, but be careful not to add too much in the first instance, as it can taste bitter!

  3. Fold the white chocolate swirls into the mixture, pour into the ice-cream moulds and leave to set!

Cookies and Cream

  1. Add your ice cream and 3 oreos into a blender/smoothie maker. You will have to add a few dashes of milk (almond/soya/dairy) to ensure that the mixture is wet enough to blend!

  2. When the mixture is blended, crush 2 oreos by hand and fold into the mixture. This will mean you get some nice chunks of oreos in your ice cream!

  3. Pour into the ice-cream moulds and leave to set!

Recipe Notes

I use ice lolly moulds that I bought online (link the one I bought: https://amzn.to/2GcdMbY) which hold about 50ml each. There are 6 moulds, so my measurements are to fill all 6 moulds, so one flavour at a time. You could do 6 different flavours in one mould set though, but that would create a lot more washing up....!!
