Beef Stir Fry & Omelette
Super easy and quick meal!
- Pak Choi
- Fresh Coriander
- 2 Eggs
- 100g Beef
- 1 Carrot
- 2 cloves Garlic
- (thumb size) Ginger Root
- 1 Onion
- Red Cabbage
- Light and Dark Soy Sauce
Chop the onion, julienne the carrots, chop the red cabbage into one pile.
Crush the cloves of garlic.
Take the skin off the ginger and then grate; you can mince with a knife but I find that grating makes for a more even distribution of ginger in your dish.
Fry the onion, carrots, red cabbage, garlic and ginger for a few minutes to soften, before adding the beef.
Whilst the beef and vegetables are cooking, prepare the omelette.
In a bowl, whisk 2 eggs, one tablespoon of light soya sauce and a handful of chopped coriander.
Fry the omelette mix in a frying pan on a medium heat for 5 minutes before flipping over and frying the other side.
When the beef and vegetable is cooked to your satisfaction, add one tablespoon of light soy sauce and 1.5 tablespoons of dark soy sauce and reduce down.
In a separate pan, gently fry pak choi. You may need to add a tiny amount of water to get the pak choi to soften up. Add half a tablespoon of light soy just before taking out of the pan.
Serve everything together and enjoy!
