Mini Potato Bites

Potato case

  • 2 medium potatoes


  1. Pre-heat your fan oven to 200°C or your gas oven to 180°/6.

  2. Peel, and boil your potatoes. When they have boiled, mash them and add a little salt and pepper.

  3. Oil/spray fry light into a muffin tray.

  4. Using your fingers, take a little mashed potato and roll into a ball. Push into the bottom of the muffin tray and spread with your fingers to make a pastry case.

  5. Once you have lined your muffin tray with the potato, put into the oven for 20 minutes.

  6. Turn the tray around after 20 minutes. The potato will have puffed up!

  7. After another 10 minutes, the potato will have turned golden brown. If you prefer your potato more crispy, you can leave it in for another 5 - 10 minutes. 

  8. Wait for the potato cases to cool down and fill with your filling of choice!
