Servings 1 Person

  • 120 grams lean turkey mince
  • quarter chopped red onion
  • 2 cloves crushed garlic
  • one pinch grated fresh ginger
  • one pinch chopped fresh coriander
  • one egg yolk (you won't need all of the egg yolk)
  • freshly chopped chillis
  • 5 grams peanuts (crushed)
  • half teaspoon fish sauce
  • whole meal roll
  • lettuce

  • half medium sweet potato
  • chilli flakes/chilli powder

  • half tablespoon light mayonnaise
  • one tablespoon sriracha
  • pinch fresh coriander
  • squeeze lemon juice

To make the chips

  1. Pre-heat your fan oven to 200°C or your gas oven to 180°/6. I have an air fryer, so I pre-heat the air fryer at max heat for around 5 minutes.

  2. Chop up your sweet potato into chunky chip sizes. Sweet potato cooks fast and goes soft quickly, so no need to par-boil. Sprinkle salt and chilli powder and mix.

  3. Place on a baking tray and spritz with fry-light/coat with oil. If using the oven, bake for 20 minutes. If using the air fryer, cook for around 15 minutes. Make sure you shake the chips around after 10 minutes

To make the burger

  1. Mix the turkey mince, coriander, ginger, garlic, onion and fish sauce into a mixing bowl. Add a pinch of salt and pepper. Mix thoroughly.

  2. Add the egg yolk bit by bit - don't add it all at once because you don't want the mixture to be too sticky.

  3. When you are happy with the consistency of the mixture, roll into a ball and then flatten into a burger patty shape.

  4. Fry in the frying pan with either fry-light or oil. Fry on a low-medium heat for around 5 minutes on both sides to make sure the meat is cooked all the way through, then turn the heat up high to brown both sides.

  5. To make the Dressing

  6. Add half a tablespoon of light mayonnaise and one tablespoon of sriracha into a small bowl and mix.

  7. Add fresh coriander and a squeeze of fresh lemon.

To Serve

  1. Toast your roll.

  2. Spread your dressing on both the bottom and top of the roll.

  3. Add lettuce to the bottom of the roll.

  4. Place your burger on top of the lettuce.

  5. Sprinkle fresh chilli and your crushed peanuts on top of the burger.

  6. Serve with chips and enjoy!

Recipe Notes

If you are doing Slimming World, I work this out to be 3 syns per person (1 syn for half a tablespoon of light mayo + half a syn for 1 tablespoon of sriracha + 1.5syns for 5g of crushed peanuts) if you use the wholemeal roll for your Hex B.
